Onolicious Hamburger Steak

In Hawaii, you can almost always find a classic Onolicious hamburger steak plate in a food truck, drive-in, or restaurant. It is still one of those foods that, even with your best recipe, you can’t get the same flavor at home as you can at your favorite little mom-and-pop joint.

Still one of Hawaii’s  most beloved dishes, it can also be served with a sunny-side-up egg on top, a creation known as Loco Moco.

Onolicious Hamburger Steak

It also uses common ingredients and is inexpensive. You most likely already have seasonings, eggs in the refrigerator, and rice in your cupboard. All you need to get started is some fresh ground beef.

It’s also a great idea to prepare this hamburger steak ahead of time. The ground beef patties and gravy can be prepared ahead of time, then cooked whenever you’re ready. You might wish to prepare the complete recipe, though. It reheats and freezes beautifully.

Ingredients

Hamburger

  • 2 pieces bread or 1/4 cup of bread crumbs
  • 1 1/2 pounds ground beef
  • 1 large egg, beaten
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 2 tablespoons mayonnaise
  • 2 tablespoons oyster sauce
  • 1 small onion, grated
  • 1 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 1 1/2 cups low-sodium beef broth, divided

Gravy

  • For the Gravy
  • 2 cups beef stock
  • 3 tbsp cornstarch
  • 1 tsp shoyu
  • 1 tsp Worcestershire Sauce
  • 1 cup sliced mushrooms
  • Other half of onion sliced
  • Salt
  • Pepper
  • Cornstarch

Let’s Cook

For the gravy Heat oil and butter in a large skillet over medium heat. Add the pepper, salt, and onions. Cook for 20 to 25 minutes, or until onions are caramelized. Add flour to onions and mix until well combined.

Take off the heat and place aside.

Regarding the hamburger Soak the bread in milk in a small bowl and leave it aside. Combine the egg and the beef in a big basin. Add bread mixture, onion, ketchup, mayonnaise, oyster sauce, Worcestershire sauce, and salt & pepper.

Shape into eight patties.Heat the oil in a different skillet over high heat. Brown patties; cook for approximately 15 minutes over medium-high heat, flipping once, and continue cooking until done.

Move to a plate and reheat. Pour half of the stock into the skillet, making sure to scrape out any browned remains. Add onions that have caramelized.

Add remaining broth and stir until thickened. Put the burger patties back in the skillet.
Warm up thoroughly.

Serves about 8 people, cook a sunny side egg and place on top of patty for a classic loco moco!
